Before harvest, our tea plants are carefully shaded. This time-honored method, used exclusively for matcha, deepens the leaves’ green color, enriches their L-theanine content, and creates the mellow umami that defines true Japanese matcha.
From Fresh Leaves to Tencha
Right after harvest, the tea leaves are gently steamed to lock in their vibrant green color and fresh aroma. They are then cooled and dried, becoming tencha, the pure unground form of matcha that awaits stone milling.
